Yummy Cookies

Yes, I love cookies. They are soooo good, and a perfect way to end a nice meal at home or an easy thing to fix and bring when a friend has invited you over for dinner. I have tried this recipe several times, and I think I've perfected a couple of versions. I use all organic ingredients when I cook or bake at home, but I'm sure whatever you have on hand will work fine. Oh, and I personally think most cookies taste best when slightly warm - 15 seconds in the microwave before serving does wonders!

Peanut Butter Cookies with Chocolate Drizzle
3/4 c. peanut butter
1/2 c. granulated sugar
1/2 c. packed brown sugar
1 t. vanilla
1 egg
1 1/4 c. flour
1/2 t. baking soda
1/2 t. salt
1/8 t. cinnamon
1 T. granulated sugar for topping
3 oz. dark chocolate

Mix first 5 ingredients in a large bowl. In a separate bowl mix the next 4 ingredients sifting to be sure everything is incorporated. Add flour mixture to sugar mixture and stir with a spooon or whisk until it becomes difficult to stir. Then roll up your sleeves and mix with your hands. Dough should pinch together and stick. If it's still too floury (depending on your ingredients, this may happen) add about 2 T. of almond oil (or peanut oil or canola oil).

Roll into 1" balls and place on an ungreased cookie sheet (I use Silpat). Dip a fork into water & then in the granulated sugar and make cross-hatch marks on the top of each cookie ball to flatten. Bake for 10 mins. at 375 degrees.

While cookies are baking, melt chocolate in a bowl in the microwave or a double boiler. When you remove cookies from the cookie sheet and place on a cooling rack, drizzle the melted chocolate over the top of the cookies.


Alternative recipe: Almond Cranberry Chocolate Chip Cookies
Use almond butter instead of peanut butter. Add dried cranberries to the dough after it is well mixed & stir in dark chocolate chips. Dough will be VERY thick, but the end result is well worth the difficulty in mixing the ingredients. Great holiday cookie.
